Give breakfast a French twist with our fruity crêpes. Just make sure to fill them quickly since sautéed crêpes become crisp and firm as they cool.

Ingredients

Pear(s)

4 medium, ripe, unpeeled

Butter flavour cooking spray

1 spray(s)

Unpacked brown sugar

1 tbsp(s)

Lemon zest

2½ tsp(s), grated (zest)

Almonds

2 tbsp(s), sliced

Reduced-calorie margarine

2 tsp(s)

Crepe(s)

4 item(s), store-bought

Instructions

  1. Quarter pears lengthwise and remove cores. Slice each pear wedge horizontally into 1/4-inch thick slices.
  2. Heat a nonstick skillet coated with cooking spray over low heat; add pears and sauté until very tender, about 5 minutes. Add sugar, zest and almonds; sauté 2 minutes, remove from pan and set aside.
  3. Wipe skillet clean and place over medium heat. Melt 1/2 teaspoon of margarine and place 1 crêpe in skillet; cook until crêpe is lightly browned around edges, about 30 seconds. Remove crepe to a serving plate and spoon 1/4 of pear mixture down the width of one edge of the crêpe; roll up and repeat with remaining margarine, crêpes and filling. Yields 1 crêpe per serving.
