This sweet, flavourful chutney will do wonders for grilled chicken or pork. Fresh cilantro adds a bright herbal note.

Ingredients

Ginger root

1 tsp(s), fresh, grated

Jalapeño pepper

1 medium, cored, seeded and minced*

Shallots

2 small, minced

Peach

2 large, ripe, chopped

Cooked corn

1 ear(s), medium, shucked (or 1/2 cup frozen corn kernels)

Balsamic vinegar

1 tbsp(s), white variety

Vegetable broth

1 tbsp(s), or chicken broth

Table salt

tsp(s)

Cilantro

2 tsp(s), fresh, minced

Instructions

  1. Coat a heavy-bottomed pot with cooking spray; heat over medium-high heat. Add ginger, jalapeno and shallots; sauté until tender, about 2 minutes.
  2. Add peaches and corn; stir in vinegar, broth and salt. Cover pot with a tight-fitting lid and reduce heat to low; simmer until peaches are tender and slightly pulpy, about 10 minutes. Spoon into a serving bowl and sprinkle with cilantro. Yields about 1/2 cup per serving.

Notes

*Do not touch seeds with your bare hands.You can skin the peaches if desired. Dip the peaches in boiling water for 1 minute and then remove the skins with a paring knife; chop as directed above. If fresh peaches are not available, substitute 1 1/2 cups of diced, frozen, thawed peaches in their place.
