A delicious orange-ginger compote tops rich-tasting but low point soy yogurt. Try this for a light dessert or decadent (seeming!) breakfast.

Ingredients

Orange

2 large, seedless

Maple syrup

1 tbsp(s)

Ginger root

1 tbsp(s), fresh, minced

Plain soy yogurt

2 cup(s)

Slivered almonds

4 tsp(s), toasted

Peppermint leaves

4 tsp(s), minced

Instructions

  1. Peel oranges and segment over a small bowl. Cut segments in half and squeeze membrane over bowl to gather as much juice as you can.
  2. Combine orange segments, maple syrup, juice, and ginger – toss well to combine.
  3. Spoon ½ cup yogurt into each dish, top with ¼ cup compote, 1 tsp almonds, and 1 tsp mint.

Notes

For a pretty presentation you can layer the yogurt and compote in parfait glasses –garnish with mint and almonds and serve. Compote can be made several days ahead. To serve as a dessert stir a little maple syrup and orange zest in with the plain yogurt before topping with compote.
