Amp up the flavour in this updated tuna melt riff with two key ingredients: hot dill pickles and spicy chili crisp. The pickles provide tang and heat, and the chili crisp (found with the Asian ingredients) lends roasty-toasty-spicy notes.


Ingredients
Canned chunk white tuna in water
6 oz, drained
Unsweetened dill pickle
¼ cup(s), chopped
Scallions
2 tbsp(s), chopped
Light mayonnaise
2 tbsp(s)
Chili crisp
1 tbsp(s), divided
Light whole grain bread
2 slice(s), toasted
Shredded part-skim mozzarella cheese
4 tbsp(s)

Preheat the broiler to high.

In a medium bowl, mash the tuna with a fork until finely flaked. Stir in the pickles, scallions, mayonnaise, and 2 tsp chili crisp. Divide the mixture evenly over the toasted bread slices. Top each sandwich with 2 tbsp cheese and arrange on a sheet pan. Broil until the cheese melts, 1 to 3 minutes. Top each sandwich with ½ tsp of the remaining chili crisp.
