One of the best things about an open-faced sandwich is that it makes you feel like you’re getting a lot more food than a single-stacked one. Bagel thins help keep the Points low, while the accompanying fruit salad fills out the plate.

Ingredients

Cooking spray

Egg

Table salt

Black pepper

Dijon mustard

Everything bagel thins

1 bagel(s), toasted

Tomato

Avocado

¼ medium, thinly sliced

Pickled onions

Fresh fruit salad

Instructions

  1. Coat a medium nonstick skillet with cooking spray and heat over medium. Crack the eggs into the pan and cook to desired degree of doneness, 3 to 5 minutes. Sprinkle the eggs with the salt and pepper.
  2. Spread ¾ tsp mustard over each bagel half; evenly layer the tomato, avocado, eggs, and pickled onions over the bagel halves. Serve with the fruit salad.
  3. Serving size: 1 plate
