Turn your regular morning oats into a real treat with these sweet waffles. Natural sweetness from the berries and bananas, fibre-rich from the oats, these will keep you feeling full all morning long and there is an added bonus...they can also be used as a dessert waffle with low fat whipped cream! You'll never suspect that these are vegan!

Ingredients

Unsweetened oat milk

½ cup(s)

Uncooked rolled oats

½ cup(s)

Banana

3 small, very ripe, coarsely chopped

Plain soy yogurt

¼ cup(s), low fat, unsweetened

Strawberries

¼ cup(s), quartered

Raspberries

¼ cup(s)

Blueberries

¼ cup(s)

Maple syrup

2 tsp(s)

Instructions

  1. Process milk, oats, and bananas in a food processor until smooth. Let stand for 20 minutes.
  2. Preheat a waffle maker following waffle maker instructions. Pour in batter, being careful not to overfill – this mixture is enough to make 2 square waffles. Cook following your waffle maker instructions until waffles are golden and cooked through.
  3. Serve each waffle topped with yogurt, berries and a teaspoon of maple syrup.

Notes

You can also make these in a silicone waffle mould. Bake at 400°F for 10-12 minutes or until set.
