Looking for a fruity, fibre-filled start to your day? Look no further than these oat and banana waffles that are perfect for your busy mornings. They are soft and fluffy with just enough sweetness from overripe bananas. To add more of a protein kick, mix 2 tablespoons powdered peanut butter with 1½ tablespoons water and then whisk into the batter (make sure to count those extra Points!).

Ingredients

Uncooked rolled oats

1¼ cup(s)

Baking powder

1 tsp(s)

Ground cinnamon

½ tsp(s)

Fat-free skim milk

½ cup(s)

Banana

1 cup(s), overly ripe, mashed

Egg

1 medium, lightly beaten

Cooking spray

2 spray(s)

Plain fat free Greek yogurt

¼ cup(s), for garnish

Blueberries

½ cup(s), for garnish

Honey

2 tsp(s), for garnish

Instructions

  1. Combine oats, baking powder, cinnamon and ¼ teaspoon salt in a large bowl. Make a hole in the centre and add milk, banana, and egg and whisk until combined.
  2. Preheat a 20cm waffle maker on high heat. Once hot, lightly spray with oil, spoon in one-quarter of the batter to evenly coat the waffle maker. Close lid and cook for 4-5 minutes or until crisp around the edges and cooked through to the centre. Repeat with remaining batter to make 4 waffles.
  3. Serve waffles topped with yogurt, blueberries and honey.
  4. Serving size: 1 waffle per person
