Ingredients
All-purpose flour
2½ cup(s), (600 ml)
Baking powder
1½ tsp(s), (7,5 ml)
Table salt
½ tsp(s), (2 ml)
Light butter
⅓ cup(s)
Water
1 cup(s), (240 ml)
Preserves
1 cup(s), cloudberry or rasberry (240 ml)
Instructions

Preheat oven to 425°F (210° C). Coat an 8-inch square baking pan with cooking spray.

In a large bowl, combine flour, baking powder and salt. Add butter and mix with your fingers until butter is pea-size. Add water and mix with a spoon until a soft dough forms.

Transfer dough to prepared pan and press down with wooden spoon to cover the pan’s surface. Bake 20 to 25 minutes, until lightly golden.

Cool in pan 5 minutes before slicing into 8 equal pieces. Serve with cloudberry jam on the side.
