No-cook chia breakfast pudding

Chia seeds are loaded with protein and fiber and can absorb up to nine times their weight in liquid. They are great in no-cook puddings like this one, or try them sprinkled over yogurt or cereal. Be aware that they develop a thick, viscous quality when soaked, somewhat like the texture of cooked tapioca.


Ingredients
Dried chia seeds
½ cup(s)
Unsweetened vanilla almond milk
2 cup(s)
Agave nectar
3 tbsp(s)
Strawberries
2 cup(s), roughly chopped
Unsweetened coconut flakes
2 tbsp(s), toasted if desired
Instructions

Mix chia seeds, almond milk, and agave in medium bowl and stir until combined. Cover and refrigerate until thick, about 8 hours or overnight.

Stir pudding and spoon into 4 bowls. Top each evenly with strawberries and coconut flakes.

Serving size: a generous ½ cup pudding, ½ cup strawberries, and 1/2 tbsp coconut
