This fresh, crisp salad is both sweet and tart, featuring Granny Smith apples, fresh radishes, and white balsamic vinegar. It makes a lovely addition to roasted turkey or ham and takes just 20 minutes to throw together. You can assemble the salad, then let it sit in the fridge for up to 4 hours, turning this recipe into the perfect make-ahead side dish. Just be sure to let it come to room temperature about a half hour before tossing with the dressing.

Ingredients

Granny Smith apple

2 large, unpeeled, cut into thin wedges*

Uncooked fennel bulb

1 medium, trimmed, thinly shaved*

Radishes

1 pound(s), red variety, trimmed, cut into thin half moons*

White balsamic vinegar

3 tbsp(s)

Walnut oil

2 tbsp(s), toasted variety

Dried dill weed

1 tsp(s)

Sugar

½ tsp(s)

Table salt

½ tsp(s)

Black pepper

½ tsp(s), freshly ground

Instructions

  1. In a large bowl, toss together apples, fennel, radishes and vinegar; cover and refrigerate for up to 4 hours (allow to come back to room temperature for 30 minutes before serving).
  2. Add oil, dill, sugar, salt and pepper just before serving; toss well.
  3. Serving size: 2/3 cup

*Or you can cut the apple and vegetables into matchsticks.
