Ingredients

Graham cracker crumbs

¾ cup(s)

Unsalted butter

2¼ tbsp(s), melted

Neufchâtel cheese

8 oz

Plain fat free Greek yogurt

¼ cup(s)

Honey

1½ tbsp(s), or agave nectar

Fresh lemon juice

½ tbsp(s)

Vanilla extract

1 tsp(s)

Table salt

Mixed berries

1 cup(s), optional

Unsweetened cocoa powder

½ tbsp(s), optional

Instructions

  1. In a bowl, combine graham crackers and butter and mix well. Spoon equal amounts into 12 mini cupcake holes. Press down firmly and refrigerate while preparing rest of cheesecake.
  2. In a bowl, mix Neufchatel cheese, yogurt, honey, lemon juice, vanilla extract and salt until you get a smooth consistency. Spoon equal amounts of filling onto each crust. Smooth out with a spoon. Refrigerate for at least 1 hour. Serve with an optional garnish of berries and cocoa powder.
  3. Serving size: 1 cheesecake bite
