Our pared-down take on the French salad uses olives, fresh lemon zest and juice, and tomatoes. We love to serve it piled onto sweet Bibb lettuce leaves.

Ingredients

Lemon

1 wedge(s), large, zested and juiced

Cooked white potato

2 cup(s), finely chopped, at room temperature

Tomato

1 large, finely chopped

Olives

16 medium, niçoise variety, pitted

Table salt

½ tsp(s)

Black pepper

¼ tsp(s)

Chunk light tuna in water

5 oz, (1 can), drained and flaked

Instructions

  1. In a large bowl, combine the lemon zest and juice. Add the potatoes, tomato, olives, salt, and pepper and toss until mixed well. Gently stir in the tuna.
  2. Per serving: about 1 cup
