Nectarine Cookie Crisp

Sliced nectarines are baked to perfection beneath an amaretti cookie topping. The only thing that would improve this dessert is a scoop of light vanilla ice cream.

- Preheat oven to 375ºF.
- Place nectarines in an ungreased round baking dish; toss with liqueur. Spread nectarines into an even layer and top with cookie crumbs; drizzle melted butter over top.
- Bake until fruit bubbles, about 45 to 50 minutes. Allow to cool; serve either warm or cold. Yields 1 slice per serving.
You can use any stone fruit in this dessert: Peaches, apricots, plucots and plums all work well.You can use light butter in this recipe but we like the taste of regular butter better and decided that for 1 1/2 teaspoons of butter per serving, it's worth using the real thing.
