Mozzarella, red pepper and pesto sandwich
WW Bread 100% Whole wheat bread
fat free mayonnaise
store-bought pesto sauce
part-skim mozzarella cheese
6 oz, thinly sliced
roasted red peppers (packed in water)
2 oz, (water-packed), 2 pieces thinly sliced
¼ cup(s), shredded, about 4 leaves
- In a small bowl, whisk together mayonnaise and pesto.
- Spread mixture on 4 slices of bread. Top slices with equal amounts of mozzarella, red peppers and lettuce. Cover with remaining bread slices and serve.
