Traditionally known for its rich, dense texture, mud cake no longer has to weigh you down.

Ingredients

Reduced-calorie margarine

6 tbsp(s), melted

Sugar

1½ tbsp(s)

Unsweetened cocoa powder

½ cup(s), powder, sifted

All-purpose flour

½ cup(s)

Self-rising flour

½ cup(s)

Almonds

cup(s), sliced, ground

Egg whites

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Coat base and sides of a 6-inch (15 cm) square nonstick pan with cooking spray.
  3. Combine margarine and sugar in a medium bowl. Stir in cocoa, flours and almonds.
  4. Beat egg whites in a small bowl with electric mixers until soft peaks form. Fold into cocoa mixture.
  5. Spread into prepared pan. Bake about 40 minutes.
  6. Cool in pan. Cut into 8 slices and serve.
