This pesto makes great use of your garden’s bounty of mint. Use it in pasta salad, over fresh tomatoes, with grilled meats or stirred into soup.

Ingredients

Peppermint leaves

3 cup(s), fresh, packed

Fresh basil

1 cup(s), fresh, packed

Chicken broth

¼ cup(s)

Olive oil

2 tbsp(s), extra-virgin

Pine nuts

2 tbsp(s), toasted

Garlic

2 clove(s), large

Fresh lemon juice

1 tbsp(s)

Kosher salt

1 tsp(s)

Crushed red pepper flakes

¼ tsp(s), or to taste

Instructions

  1. Combine all ingredients in a food processor or blender. Blend on high until smooth and combined (scraping down sides of bowl as necessary). Yields about 2 tablespoons per serving.

Notes

Crushed red pepper flakes gives this pesto a touch of heat; adjust the amount to your liking.Add chopped grape tomatoes for wonderful flavour and colour contrast.
