Mini chocolate peanut butter ice cream sandwiches

These sweet little treats could not be easier to make. We’ve taken some shortcuts to keep this recipe as easy as possible, combining a chocolate fudge ice cream bar with creamy peanut butter and chopped peanuts, and then sandwiching the mixture between chocolate wafers. We opted for salted peanuts in our recipe to give these a sweet and salty flavour, but you can use unsalted or honey roasted peanuts, if you like.
