Frozen phyllo shells make these bite-sized quiches a snap to make—no fussing with pastry dough, and no mini muffin pan required. Simply arrange the shells on a sheet pan and fill with our tasty ham, Swiss, and egg filling. They’re delicious straight from the oven and also at room temperature, so you can set them out and not have to worry about keeping them warm. The shells remain crisp, and the savory filling is sure to satisfy at any temperature.

Ingredients

Mini phyllo shells

1% low-fat milk

½ cup(s)

Uncooked scallions

2 tbsp(s), finely chopped

Kosher salt

¼ tsp(s)

Black pepper

¼ tsp(s)

Raw egg

1 large

Uncooked Canadian bacon

2 oz, finely chopped

Low-fat Swiss cheese

1 oz, or light Jarlsberg, shredded (1/4 cup)

Instructions

  1. Preheat oven to 350°F. Line a large sheet pan with parchment paper. Arrange phyllo shells on pan and bake 3 minutes. Remove from oven (keep oven on).
  2. In a small bowl, whisk milk, scallions, salt, pepper, and egg until well blended. Divide bacon and cheese evenly among phyllo shells. Top evenly with egg mixture (a little more than 2 tsp each). Bake until set, 10 to 12 minutes.
  3. Serving size: 2 quiches
