Cumin and fresh lemon juice give this butter bean-based dip wonderful Middle Eastern flavour. Feel free to use fava or broad beans instead.

Ingredients

Olive oil

2 tbsp(s), extra-virgin

Lemon zest

1 tbsp(s), freshly grated

Fresh lemon juice

1½ tbsp(s)

Cumin seeds

½ tsp(s)

Table salt

¾ tsp(s), or to taste

Black pepper

¼ pinch(es), freshly ground, or to taste

Canned lima beans

19 oz, rinsed and drained

Fresh parsley

½ cup(s), fresh, Italian flat leaf, chopped

Instructions

  1. Combine all ingredients in a blender or food processor; process to desired consistency. Yields about 1/4 cup per serving.

Notes

If your dip is too thick, use water and extra lemon juice to thin it out. This dip makes a wonderful sandwich spread.
