Marinated Portobello Feta Salad

This dressing is so delicious that you'll want to make extra for later in the week. It'll stay fresh in the refrigerator for up to 7 days.


Honey mustard

2 tbsp(s)

Fresh basil

1 tbsp(s), chopped, or any other herbs you have on hand

Uncooked shallot(s)

1 tbsp(s), or onion, chopped

Maple syrup

½ tbsp(s)

Red wine vinegar

2 tsp(s)

Olive oil

2 tsp(s)

Uncooked portabella mushroom(s)

1½ pound(s), about 4 mushrooms, stems removed

Fresh mixed greens

8 cup(s)

Garlic clove(s)

1 clove(s), small

Feta cheese

4 oz, crumbled


  1. Preheat broiler.
  2. In a food processor, combine mustard, basil, shallots, maple syrup, vinegar, oil and garlic.
  3. Place mushrooms in a baking pan, stem-side up; pour dressing over each. Broil until tender, about 5 to 7 minutes. Remove from oven and slice.
  4. Place 2 cups baby greens on each plate. Top with 1 sliced mushroom and 1 oz crumbled feta cheese.
