Marinated Portobello Feta Salad
1 Tbsp, chopped, or any other herbs you have on hand
1 Tbsp, or onion, chopped
Red wine vinegar
1½ pound(s), about 4 mushrooms, stems removed
Fresh mixed greens
1 clove(s), small
4 oz, crumbled
- Preheat broiler.
- In a food processor, combine mustard, basil, shallots, maple syrup, vinegar, oil and garlic.
- Place mushrooms in a baking pan, stem-side up; pour dressing over each. Broil until tender, about 5 to 7 minutes. Remove from oven and slice.
- Place 2 cups baby greens on each plate. Top with 1 sliced mushroom and 1 oz crumbled feta cheese.
