Fresh and flavourful, this fruity salsa pairs sweet fresh mango with creamy avocado, which is always a winning combination. It goes wonderfully with grilled or roasted chicken, fish, or shrimp. You will likely want to juice and seed the tomato to keep the flavours concentrated in this salsa. We’ve called for a beefsteak tomato here, but you can use whatever variety that you like as there are lots of delicious options to choose from when tomatoes are in season in the summer. Feel free to up the amount of fresh cilantro, and adjust the salt as your taste buds determine is best.

Ingredients

Avocado

1½ medium, or 1 large, Hass variety, pitted, peeled, and diced

Mango

1 large, pitted, peeled and diced

Tomato

1 large, beefsteak variety, diced

Red onion

2 tbsp(s), chopped

Fresh lime juice

2 tbsp(s)

Cilantro

2 tsp(s), chopped, or to taste

Table salt

1 pinch(es)

Combine all ingredients in a medium bowl; let sit for 15 minutes to allow flavours to blend.
