These beans are big on flavour! Serve them with grilled chicken or fish for a side dish with a lot of wow-power.

Ingredients

Olive oil

2 tsp(s)

Garlic clove(s)

2 clove(s), medium, minced

Ginger root

1 tbsp(s), fresh, minced

Uncooked string beans

3 cup(s), fresh or frozen and thawed

Fresh lemon juice

2 tbsp(s)

Table salt

tsp(s), or to taste

Black pepper

pinch, freshly ground, or to taste

Instructions

  1. Heat oil in a large skillet over medium or medium-low heat. Add garlic and ginger and cook 1 minute. Add string beans and cook until golden brown, about 2 minutes. Add lemon juice and 2 teaspoons zest; cover and steam until string beans are crisp-tender, about 2 minutes. Season to taste with salt and black pepper. Yields about 3/4 cup per serving.

Notes

You’ll need 1 medium lemon to yield the 2 tablespoons of lemon juice and 2 teaspoons of zest.This dish also works with snap peas and snow peas, if you prefer.
