Packed with whole grains, they will leave you feeling full throughout the day or into the evening. For some extra oomph, combine 2 tbsp of lemon juice with 1 tbsp of powdered sugar for a simple lemon glaze that will add the perfect amount of sweetness to this tart delight!

Plain unsweetened almond milk

1 medium, zested and juiced

Instructions

  1. Preheat the oven to 375°F
  2. In a small bowl, combine the almond milk, oats, egg, sugar, lemon juice, half the lemon zest and stir to combine. Divide the mixture between four muffin liners and place in a muffin tray. Bake for 20-25 minutes, until set and golden. Remove from the oven and place on a cooling rack. When cool, sprinkle each muffin with the remaining lemon zest and serve.
