Lemon baked oat muffins

Plain unsweetened almond milk
Uncooked old-fashioned rolled oats
1 medium, zested and juiced
- Preheat the oven to 375°F
- In a small bowl, combine the almond milk, oats, egg, sugar, lemon juice, half the lemon zest and stir to combine. Divide the mixture between four muffin liners and place in a muffin tray. Bake for 20-25 minutes, until set and golden. Remove from the oven and place on a cooling rack. When cool, sprinkle each muffin with the remaining lemon zest and serve.
