Layered Mexican Bean Dip

This zesty dip is always a hit at parties. Jazz it up by tossing on diced bell peppers and shredded lettuce. Or get spicy by adding jalapeño slices.


Ingredients
Fat free refried beans
16 oz
Low-fat shredded cheddar cheese
½ cup(s)
Avocado
3 medium, Haas, finely mashed
Table salt
¼ tsp(s)
Fresh lemon juice
1 tsp(s)
Reduced-fat sour cream
1 cup(s)
Fajita seasoning mix
2 tbsp(s)
Tomato
1 small, chopped
Uncooked scallions
2 medium, sliced
Olives
10 large, black, sliced or chopped
Cilantro
2 tbsp(s), fresh, chopped
Instructions

Spread beans evenly over bottom of a 9 X 13-inch glass baking dish.

Combine avocado, salt and lemon juice together in a small bowl. Spread avocado mixture over beans; top with sour cream.

Sprinkle fajita seasoning over sour cream layer. Next, layer remaining ingredients on top in order listed.

Serve immediately with jicama slices and other fresh vegetables for dipping, or chill until ready to use.
