This knife-and-fork open-faced sandwich gets its name from its place of origin: the Brown Hotel in Louisville, Kentucky. It’s made by topping a piece of toast with turkey, tomato slices, and cheese sauce; broiling that combo until browned; and then topping it with bacon. To simplify prep, we make the cheese sauce in the microwave—super quick, super easy. Although we call for deli turkey, you can absolutely swap in sliced roasted turkey—a perfect use for Thanksgiving leftovers.
