This knife-and-fork open-faced sandwich gets its name from its place of origin: the Brown Hotel in Louisville, Kentucky. It’s made by topping a piece of toast with turkey, tomato slices, and cheese sauce; broiling that combo until browned; and then topping it with bacon. To simplify prep, we make the cheese sauce in the microwave—super quick, super easy. Although we call for deli turkey, you can absolutely swap in sliced roasted turkey—a perfect use for Thanksgiving leftovers.

Ingredients

1% low fat milk

All-purpose flour

Grated Pecorino Romano cheese

¼ cup(s)

Whole wheat bread

4 slice(s), toasted

Deli sliced turkey breast

Tomato

Cooked crisp center cut bacon

Instructions

  1. Preheat the broiler to High. Line a sheet pan with nonstick foil.
  2. In a 2-cup measuring cup or medium microwave-safe bowl, whisk together the milk, flour, salt, and black pepper. Microwave on High until thick and bubbly, about 3 to 4 minutes, stopping to whisk every 30 seconds. Whisk in the cheese.
  3. Arrange the bread slices on the prepared pan; top evenly with the turkey and tomatoes. Pour the cheese sauce evenly over the sandwiches. Broil until lightly browned, 2 to 3 minutes. Sprinkle sandwiches evenly with bacon.
