Jicama, Papaya and Potato Salad
1 medium, peeled and sliced into 2 1/2-inch sticks
1 medium, cubed
10 medium, new, cooked, cut in half
1 spray(s), (5 one-second sprays per serving)
1½ cup(s), chopped
2 clove(s), medium, smashed
1 Tbsp, fresh, chopped
- Preheat broiler.
- In a large bowl, combine jicama, papaya and potatoes.
- Coat an 8 x 8-inch baking pan with cooking spray. Place tomatillos and garlic in pan and broil 4 inches from broiler until the tomatilloes burst and become juicy, about 4 to 5 minutes.
- Add tomatillo mixture to jicama mixture and mix well. Top with chopped cilantro. Cover and let flavours mix for 15 minutes to 1 hour. Yields about 3/4 cup per serving.
