Hummus-Stuffed Mini Peppers

This might just be the ultimate easy snack. It’s crunchy, it’s creamy, it’s sweet, and it’s savoury. Oh, and it takes only 5 minutes to pull together, holds well in the fridge for a few days, and requires no cooking. If you like your food spicy, you can either sprinkle cayenne pepper on top instead of smoked paprika, or use jalapeños in place of sweet peppers.
Sweet mini baby bell pepper(s)
6 pepper(s), halved and seeded
¼ tsp(s), flaky variety
2 tsp(s), chopped
- Fill each pepper half with 1 1/2 tsp hummus. Arrange the stuffed pepper halves on a platter. Sprinkle evenly with the paprika and salt, then sprinkle with the chives.
