These super-simple wraps feature lots of crunchy veggies plus tofu for extra protein. They can be made in advance and keep well for a picnic or brown-bag lunch.


Whole wheat tortilla(s)

4 medium, 9 inches diameter

Store-bought hummus

¾ cup(s)

Extra firm tofu

8 oz, (1 cup) diced

Fresh parsley

¼ cup(s), flat-leaf, minced

Shredded carrot(s)

1 cup(s)

Uncooked cabbage (all varieties)

1 cup(s), chopped, shredded

Uncooked bean sprouts

1 cup(s)

Fresh lemon juice

½ tsp(s)

Table salt

½ tsp(s)


  1. Spread 3 TB of hummus down the center of each tortilla. For each wrap, place ¼ cup tofu on hummus. Sprinkle with parsley. Layer ¼ cup carrots, ¼ cup cabbage, and ¼ cup sprouts on each wrap. Sprinkle with red onion, lemon juice, and salt. Roll up burrito style, wrap tightly in wax paper, and cut in half cross-wise.
