Honey roasted baby carrots with almonds

Ingredients
Sliced almonds
2 tbsp(s)
Honey
1 tbsp(s)
Baby carrots
10 medium
Reduced-calorie margarine
2 tsp(s)
Lemon zest
1 tsp(s), finely grated
Instructions

Preheat oven to 400°F. Place carrots on a large baking tray.

Place margarine, honey and lemon rind in a small microwave-safe bowl. Microwave on High for 20 seconds or until margarine has melted.

Pour mixture over carrots and toss to coat. Season with salt and pepper. Bake for 20 minutes.

Sprinkle with sliced almonds and bake for 8–10 minutes or until carrots are tender and almonds are golden. Serve.
