This entrée couldn't be easier. Honey, hoisin sauce, and citrus juices combine to form a sweet complementary glaze that stands up to the distinctive taste of fresh salmon. Under the high heat of the broiler, the honey mixture thickens and caramelizes, and the salmon cooks quickly in under 15 minutes. When buying salmon, choose fillets that have no brown spots on the flesh and that looks smooth and glossy. The salmon shouldn't smell fishy but rather just have the subtle salty smell of the ocean. Pair the fish with sautéed green beans or asparagus and a baguette for a memorable meal that is on the table in less than 30 minutes.

Honey

Uncooked farmed skinless salmon fillet

1½ pound(s), or with skin (four 6 oz pieces)

Cooking spray

Instructions

  1. Combine first 7 ingredients and stir well with a whisk.
  2. Place fillets on a broiler pan coated with cooking spray. Brush with honey mixture; cook for 12 minutes or when fish flakes easily when tested with a fork, basting frequently with honey mixture. Yield: 4 servings
  3. Serving size: 1 fillet
