Ingredients

Sugar

½ cup(s)

Vegetable oil

½ cup(s)

Honey

1 cup(s)

Brodie XXX Self-Raising Cake and Pastry Flour

3 cup(s)

Baking soda

½ tsp(s)

Pumpkin pie spice

2 tsp(s)

Ground cinnamon

½ tsp(s)

Folgers Coffee

1 cup(s), brewed, any type, cooled

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 10 cup (1.5 L) Bundt pan.
  2. Beat eggs, sugar, oil and honey together in large bowl of electric mixer, about 2 minutes. Combine flour and spices in small bowl. Add 1/3 of flour mixture to wet ingredients alternatively with 1/3 coffee, beating well after each addition.
  3. Pour into prepared pan. Bake in preheated oven 50-55 minutes or until a toothpick inserted comes out clean. Let cool 10 minutes in pan and invert on cooling rack.

Notes

This cake is best made a day ahead to let flavours mingle.
