Ingredients

Olive oil cooking spray

6 spray(s)

Uncooked sweet potato

1 large, cut into 1/4-inch-thin slices on an angle

Kosher salt

¼ tsp(s)

Uncooked 94% lean ground turkey

8 oz

Reduced sodium taco seasoning

1 tbsp(s)

Canned black beans

¾ cup(s)

Shredded reduced-fat Mexican-style cheese

½ cup(s)

Pickled jalapeno peppers

3 tbsp(s), drained

Salsa

2 tbsp(s)

Plain fat free Greek yogurt

¼ cup(s)

Cilantro

1 tbsp(s), chopped

Instructions

1

Preheat oven to 425ºF. Line a large sheet pan with parchment and spray with olive oil.

2

Arrange the sweet potatoes on pan in single layer. Spray potatoes. Season with salt. Roast 25 minutes, until golden brown and tender, turning slices over halfway through.

3

Meanwhile, spray a medium nonstick skillet with olive oil. Heat on medium. Add the turkey and taco seasoning. Cook 5 minutes, until cooked, breaking up with a wooden spoon or spatula. Remove from heat and stir in the black beans.

4

Scatter turkey and bean mixture over the sweet potato slices. Top with the cheese and bake another 5 minutes, until cheese melts.

5

To serve, top with the pickled jalapenos, pico de gallo, Greek yogurt, and cilantro.
