Uncooked sweet potato

1 large, cut into 1/4-inch-thin slices on an angle

Kosher salt

Uncooked 94% lean ground turkey

Reduced sodium taco seasoning

Canned black beans

Shredded reduced-fat Mexican-style cheese

Pickled jalapeno peppers

Instructions

  1. Preheat oven to 425ºF. Line a large sheet pan with parchment and spray with olive oil.
  2. Arrange the sweet potatoes on pan in single layer. Spray potatoes. Season with salt. Roast 25 minutes, until golden brown and tender, turning slices over halfway through.
  3. Meanwhile, spray a medium nonstick skillet with olive oil. Heat on medium. Add the turkey and taco seasoning. Cook 5 minutes, until cooked, breaking up with a wooden spoon or spatula. Remove from heat and stir in the black beans.
  4. Scatter turkey and bean mixture over the sweet potato slices. Top with the cheese and bake another 5 minutes, until cheese melts.
  5. To serve, top with the pickled jalapenos, pico de gallo, Greek yogurt, and cilantro.
  6. Serving = 1/2 of the pan
