Prepared with yogurt instead of mayo, this flavorful take on an egg salad is packed with lots of fresh basil, parsley and dill.

Ingredients

WW Bread 100% Whole wheat bread

2 slice(s), toasted

Whole hard boiled egg(s)

2 large egg(s), peeled and diced

Plain fat free Greek yogurt

2 tbsp(s)

Dijon Mustard

1 tsp(s)

Table salt

1 pinch

Black pepper

1 pinch

Uncooked celery

¼ cup(s), diced

Fresh parsley

1 tbsp(s), finely chopped

Fresh basil

1 tbsp(s), finely chopped

Fresh dill

1 tsp(s), finely chopped

Arugula

½ cup(s)

Fresh cherry tomato(es)

4 small, sliced

Instructions

  1. Mix together eggs, yogurt, mustard, salt and pepper. Stir in celery, parsley, basil and dill.
  2. Top each slice of toasted bread with arugula and tomato slices. Top with egg salad.
  3. Serving size: 2 slices
