Prepared with yogurt instead of mayo, this flavorful take on an egg salad is packed with lots of fresh basil, parsley and dill.

Ingredients

WW 100% Whole wheat loaf

2 slice(s), toasted

Hard boiled egg

2 large, peeled and diced

Plain fat free Greek yogurt

2 tbsp(s)

Dijon mustard

1 tsp(s)

Table salt

Black pepper

Celery

¼ cup(s), diced

Fresh parsley

1 tbsp(s), finely chopped

Fresh basil

Arugula

Instructions

Mix together eggs, yogurt, mustard, salt and pepper. Stir in celery, parsley, basil and dill.
