Hearty Turkey Chili

Chili is a great opportunity to take advantage of ground turkey - it`s a little more bland, but usually much leaner, than regular ground beef.


Ingredients
Vegetable oil

Onion
1 large, chopped
Carrots
2 medium, thinly sliced into rounds
Apple cider vinegar
1½ tbsp(s)
Chili powder
2 tbsp(s)
Smoked paprika
1 tbsp(s)
Cumin seeds
1 tsp(s)
Red pepper flakes
1½ tsp(s)
Tomato
2 medium, chopped
Canned tomato sauce
1 cup(s)
Fat free chicken broth
1 cup(s)
Cooked kidney beans
1½ cup(s), rinsed and drained
Uncooked 99% fat-free ground turkey breast
1 pound(s)
Garlic
2 clove(s), large, minced
Bell pepper
1 cup(s), chopped
Instructions

Heat a large pot coated with cooking spray over medium heat. Add oil and onion; sauté onion until soft. Add garlic and carrots and cook until garlic is softened. Add ground turkey and brown meat, about 5 minutes. Stir to break up lumps.

Add chili powder, paprika, cumin and red pepper flakes, tomatoes and tomato sauce, broth and vinegar. Bring mixture to a boil and reduce heat. Cover and simmer until meat is tender, 30 to 45 minutes.

Add beans and pepper. Simmer, uncovered, until peppers are done, about 10 minutes. Divide into 1-cup servings and serve.
