This omelet is as versatile as it is easy to make. Try it with roasted turkey or baked tofu. And you can vary the cheeses as well; mozzarella or cheddar would be great options. If you have any fresh herbs on hand, chop some up to sprinkle on the cheese.

Ingredients

Egg whites

2 large

Scallions

2 tsp(s), minced

Table salt

Hot sauce

Canola oil

Cooked lean ham

½ cup(s), finely diced

Shredded parmesan cheese

¼ cup(s)

Instructions

  1. In medium bowl, beat egg whites, eggs, scallion, salt, black pepper, and hot sauce together.
  2. In large nonstick skillet over medium heat, warm oil. Pour in egg mixture and tilt skillet so bottom is covered with egg. Cook, occasionally lifting edges of egg in skillet to let uncooked egg flow underneath, until omelet is almost set, 3 to 5 minutes.
  3. Over omelet, sprinkle ham and Parmesan. Using rubber spatula, ease up edges of omelet and gently fold in half; cook until heated through, about 1 minute. Slide onto platter and cut in half.

Notes

Serving the whole family for breakfast? These ingredients also work as a frittata, and you can have it ready to serve four in less than 20 minutes. Simply use a large heavy ovenproof skillet and follow directions for steps 1 and 2. Once the eggs are just about set, sprinkle the frittata with ham and cheese and place under the broiler until the cheese melts, 2 to 3 minutes. Cut into 4 wedges.
