Ham & cheese omelet

Cooked lean ham
½ cup(s), finely diced
Shredded parmesan cheese
- In medium bowl, beat egg whites, eggs, scallion, salt, black pepper, and hot sauce together.
- In large nonstick skillet over medium heat, warm oil. Pour in egg mixture and tilt skillet so bottom is covered with egg. Cook, occasionally lifting edges of egg in skillet to let uncooked egg flow underneath, until omelet is almost set, 3 to 5 minutes.
- Over omelet, sprinkle ham and Parmesan. Using rubber spatula, ease up edges of omelet and gently fold in half; cook until heated through, about 1 minute. Slide onto platter and cut in half.
