We saved time on these potato balls by partially cooking them in the microwave. Bite into them and you'll love the savoury chunk of salty ham inside!

Uncooked potato

7 medium, Idaho

Table salt

Cooked lean ham

½ pound(s), cut into bite-size pieces

All-purpose flour

Chicken broth

¾ cup(s), reduced-sodium, or water

Bring a small pot of water to a boil. Meanwhile, peel and cube 2 potatoes; set aside. Peel and finely grate remaining 5 potatoes; set aside. Boil cubed potatoes in rapidly boiling water until fork-tender, about 8 to 10 minutes. Drain, transfer to a medium bowl and mash with a fork; stir in salt and pepper.

Place grated potatoes between several layers of paper towel and squeeze to remove excess water. Add grated potatoes to mashed potatoes and mix well; shape mixture into 8 balls. Insert 1/8 of ham into the centre of each ball and reshape ball to cover the ham; roll potato balls in flour.

Transfer balls to a microwave-safe, shallow dish and pour chicken broth over them. Cover and microwave on high until cooked through, flipping balls halfway through cooking, about 6 to 8 minutes. Season to taste, if desired. Yields 1 potato ball per serving.
