Ham and mashed potato balls
7 medium, Idaho
Cooked lean ham
½ pound(s), cut into bite-size pieces
Canned chicken broth
¾ cup(s), reduced-sodium, or water
⅛ tsp(s), or to taste
⅛ pinch, or to taste
- Bring a small pot of water to a boil. Meanwhile, peel and cube 2 potatoes; set aside. Peel and finely grate remaining 5 potatoes; set aside. Boil cubed potatoes in rapidly boiling water until fork-tender, about 8 to 10 minutes. Drain, transfer to a medium bowl and mash with a fork; stir in salt and pepper.
- Place grated potatoes between several layers of paper towel and squeeze to remove excess water. Add grated potatoes to mashed potatoes and mix well; shape mixture into 8 balls. Insert 1/8 of ham into the centre of each ball and reshape ball to cover the ham; roll potato balls in flour.
- Transfer balls to a microwave-safe, shallow dish and pour chicken broth over them. Cover and microwave on high until cooked through, flipping balls halfway through cooking, about 6 to 8 minutes. Season to taste, if desired. Yields 1 potato ball per serving.
