Ham and Black Bean Burritos

Make use of leftover Christmas ham with our no-bake "burritos." They're a snap to make.


Ingredients
Cooking spray
1 spray(s)
Cooked lean ham
1 cup(s), diced
Canned refried black beans
1 cup(s)
Fat free flour tortilla
4 medium, warmed
Cilantro
2 tbsp(s), fresh, chopped
Fat-free black bean dip
½ cup(s)
Canned black beans
1 cup(s)
Uncooked scallions
2 medium, chopped
Low-fat shredded cheddar cheese
¼ cup(s)
Instructions

Coat a nonstick skillet with cooking spray and place over high heat. Add ham and sauté until browned and crispy on edges, about 3 minutes. Reduce heat to medium-low, stir in both beans and cook until hot, about 3 minutes.

Lay a tortilla on a dinner plate. Top with 1/2 cup of beans, 2 tablespoons of dip, 1/2 tablespoon of cilantro, 1 tablespoon of cheese and 1/4 of scallions. Fold in sides, roll up and repeat.
