Uncooked zucchini

1 pound(s), small to medium, trimmed, halved lengthwise, or if medium, sliced lengthwise

Kosher salt

½ tsp(s)

Black pepper

Paprika

Italian seasoning

Instructions

  1. Heat a grill or grill pan to medium-high. Trim 450 g (1 lb) medium zucchini and cut lengthwise into 0.6-cm (1⁄4-in) slices. Arrange the zucchini on a baking sheet and coat all over with cooking spray. In a small bowl, combine 2 ml (1⁄2 tsp) each salt, black pepper, paprika, and Italian seasoning and sprinkle on the zucchini. Grill the zucchini until grill marks appear, about 3 minutes. Turn the zucchini over and sprinkle with 55 g (2 oz) grated Parmesan. Grill the zucchini until tender, 3 to 4 minutes.
