Jalapeño pepper adds a nice little kick to this fruity salsa, but if you would like a little less heat, halve or omit the jalapeño.

Ingredients

Cooking spray

4 spray(s)

Sugar

2 tbsp(s)

Orange zest

1½ tsp(s)

Table salt

¾ tsp(s)

Ground red pepper

¼ tsp(s)

Uncooked farmed salmon fillet with or without skin

1½ pound(s), four 6-oz pieces

Mango

2 cup(s), chopped (about 2 small mangoes)

Unsweetened orange juice

¼ cup(s)

Red onion

2 tbsp(s), chopped, finely

Cilantro

2 tbsp(s), finely chopped

Ginger root

1 tbsp(s), minced

Fresh lime juice

1 tsp(s)

Jalapeño pepper

1 small, seeded and minced

Instructions

  1. Combine the sugar, zest, salt, and red pepper in a small bowl or cup; rub mixture over salmon. Place salmon in a shallow dish; cover and refrigerate 8 hours.
  2. Combine mango, orange juice, onion, cilantro, ginger, lime juice, and jalapeño in a medium bowl; cover and chill 1 hour.
  3. Off heat, coat a grill rack with cooking spray. Prepare grill to medium-high.
  4. Grill salmon until fish flakes easily when tested with a fork, about 4 minutes per side. Serve with mango salsa.
  5. Serving size: 1 salmon fillet and 1⁄2 cup salsa
