Ingredients
Peach
3 medium
Olive oil
2 tsp(s)
Kosher salt
⅛ tsp(s), or to taste
Black pepper

Sweet onions
1 medium
Cilantro
20 sprig(s), or 1 small bunch
Plum tomato
1 medium
Jalapeño pepper
1 medium
Lime
1 wedge(s)

Preheat a grill or grill pan on high. Cut the peaches into halves and remove pits. Brush cut sides of peaches with 1 tsp olive oil. Season with a pinch of salt and pepper. Grill peaches 6 to 10 minutes, until grill marks appear and peaches are tender. Remove from grill and let cool.

Meanwhile, finely chop the onion and cilantro. Add to a large bowl. Remove seeds from the tomato and jalapeño, then finely chop and add to bowl. Stir to combine.

When peaches are cool, finely chop and add to bowl, along with the juice of the lime (about 1 tbsp) and remaining 1 tsp oil. Season with salt and pepper to taste. Toss to combine. Serve with chips, protein, rice bowls, or tacos.
