This classic Mexican street food can take the heat. Add 1 or 2 teaspoons of chili powder or a pinch of cayenne to the mayonnaise mixture, if you wish.

Instructions

Preheat grill to medium-high or prepare medium-high fire.

Wrap each ear of corn in heavy duty aluminum foil. Place on the grill rack and grill, turning occasionally, until corn is tender, about 8 minutes.

Meanwhile, mix together the mayonnaise, cilantro, and lime zest and juice in a cup. Brush the mayonnaise mixture all over the hot, cooked corn and sprinkle with Parmesan just before serving.
