Heat a grill or grill pan to medium-high. In a small bowl, whisk 60 ml (1⁄4 cup) light mayonnaise, 15 ml (1 Tbsp) salt-free lemon-pepper seasoning, and 1 ml (1⁄4 tsp) salt. Arrange 4 (115-g [4-oz]) chicken cutlets (or two 225-g [8-oz] chicken breasts, each cut into 2 cutlets) on a baking sheet and brush both sides of the cutlets with the mayonnaise. Grill the chicken, turning once, until cooked through, 3 to 5 minutes per side.
