Ground cumin

Chili powder

Smoked paprika

Ground cinnamon

Uncooked lean flank steak

Olive oil

1 tbsp(s), extra virgin, divided

Red bell pepper

1 medium, thinly sliced

Yellow bell pepper

1 medium, thinly sliced

Zucchini

1 small, halved lengthwise, sliced into semicircles

Red onion

2 large, thinly sliced

WW White tortilla

Instructions

  1. In a small bowl, combine cumin, garlic, salt, chili powder, paprika, cinnamon, and pepper. Rub steak with 1 tsp oil and 1 Tbsp spice mixture; set aside.
  2. In a large bowl, toss vegetables with remaining 2 tsp oil and remaining spice mix.
  3. Preheat outdoor grill to medium-high.
  4. Add veggies to a grill basket and place on grill. Add flank steak to grill.
  5. Grill steak 8 minutes, flipping once, (for medium-rare, or longer to desired degree of doneness); remove steak to a cutting board and loosely cover, let rest for 5 minutes. Remove veggies.
  6. Slice the steak and serve in tortillas with vegetables.
