A generous dollop of store-bought tzatziki sauce brings everything together.

Canned drained chickpeas

¾ cup(s), rinsed

Fresh lemon juice

1 tbsp(s), divided

Dried oregano

¼ tsp(s)

Roasted red peppers (packed in water)

¼ cup(s), chopped

Cucumber

½ cup(s), chopped

Grape tomatoes

½ cup(s), chopped

Crumbled feta cheese

2 tbsp(s)

Cooked frozen shrimp

4 oz, peeled

Tzatziki sauce

Instructions

In a medium bowl, mash together the chickpeas, 1 ½ tsp lemon juice, and oregano to your desired consistency; stir in the red peppers. Spoon the chickpea mixture into a shallow bowl.

In the same bowl used to mash the chickpeas, toss together the cucumber, tomatoes, feta, and remaining 1 ½ tsp lemon juice. Spoon the cucumber mixture over the chickpea mixture. Arrange the shrimp and tzatziki in the bowl.
