Our version of this fall favourite begins with two-ingredient dough (made with self-rising flour and Greek yogurt) combined with a little powdered sugar, cinnamon, and vanilla extract for a sweet flavor boost. Diced unpeeled apples then go in, and the mixture is divided into pieces and baked until crisp on the outside and chewy-tender on the inside. A quick yogurt glaze is the perfect finishing touch, along with colorful sprinkles for a fun, fresh spin.

1 cup(s), unpeeled, finely chopped

Instructions

  1. Preheat the oven to 375°F. Line a large sheet pan with parchment paper.
  2. In a medium bowl, whisk together the flour, 2 tbsp sugar, and cinnamon. Add ¾ cup plus 2 tbsp yogurt and vanilla; stir well with a wooden spoon until just combined and then keep mixing the dough in the bowl with your hands until smooth (about 2 minutes of kneading). Add the apple and knead gently until combined.
  3. Divide the dough into 8 equal pieces, rolling each into a ball. Arrange the balls on the prepared pan and flatten each into a 3-in circle (it’s OK if they’re irregular). Bake until golden brown on top and bottom, 20 to 22 minutes. Remove the fritters to a wire rack and cool for 10 minutes.
  4. Meanwhile, in a small bowl, stir together the remaining 6 tbsp sugar and 2 tbsp yogurt until smooth. Spread the glaze over the fritters; top evenly with the sprinkles.
