These adorable boats come together in no time. The bananas are baked right in their skins to soften and heat up the banana. The skins turn a dramatic dark brown while they bake. The bananas are slit open, garnished with chocolate chips, coconut, and pecans then head back into the oven and baked just until the toppings are toasted. A drizzle of sweetened condensed milk finishes off this fun dessert. If you don't have any pecans, try using walnuts instead.

Banana

2 medium

Semisweet chocolate chips

1 tbsp(s)

Unsweetened shredded coconut

1 tbsp(s)

Chopped pecans (unsalted, raw or dry roasted, no sugar added)

1 tbsp(s)

Sweetened condensed milk

2 tsp(s)

Instructions

Preheat oven to 350°F. Line baking sheet with parchment paper. Arrange bananas in skins on prepared sheet. Bake until heated through, about 5 minutes. (The skins will turn very dark, almost black.) Remove from oven and increase temperature to 400°F.

Using sharp knife, slice skin lengthwise down each banana, then cut about 1 inch crosswise at top and bottom of each lengthwise slit. Open skins slightly. Dividing equally, sprinkle chocolate chips, coconut, nuts, and milk down length of bananas inside skins. Return bananas to oven. Bake until toppings are toasted and condensed milk has caramelized, about 5 minutes.
