Gambas al Ajillo (Garlic Shrimp)
1 pound(s), large, peeled and deveined
Extra virgin olive oil
Crushed red pepper flakes
8 clove(s), large, thinly sliced
2 tbsp(s), finely chopped
2 tbsp(s), dry variety
- In a medium bowl, toss together the shrimp and salt; set aside.
- Heat the oil in a large nonstick skillet over medium. Add the pepper flakes and garlic; cook until the garlic just begins to brown, about 1 minute. Add the shrimp mixture; cook, turning the shrimp occasionally, until the shrimp are cooked through, about 3 minutes. Stir in the parsley, sherry, and lemon zest; cook 1 minute. Serve the shrimp mixture with the baguette.
