If you're in a hurry, grab two of these, a piece of fruit and a small container of yogurt for a healthy, energy packed breakfast-to-go. Experiment baking these cookies with different types of dried fruit such as golden raisins, dried peaches, and dates. Add some chopped nuts, if desired.


Ingredients
Self-rising flour
1 cup(s)
Ground cinnamon
1 tsp(s)
Ground nutmeg
1 tsp(s)
Unpacked brown sugar
1 tbsp(s)
Dried apricot halves
6 half/halves, chopped
Dried apples
¼ cup(s), chopped
Raisins
¼ oz, chopped
Olive oil
1 tsp(s)
Raw egg
2 large, lightly beaten
Fat-free skim milk
¼ cup(s)
Instructions

Preheat oven to 400F. Coat a nonstick baking sheet with cooking spray.

Sift dry ingredients into a bowl and stir in dried fruit.

Stir in oil, eggs and milk until well-combined.

Place tablespoons of mixture onto baking sheet and bake in oven for about 10 minutes.
