Fruit and Ricotta Parfait
Happy Mother's Day! Dad (or older kids) can chop and slice the fruit, and younger children can build Mom a light and creamy breakfast parfait all by themselves.
Fat-free ricotta cheese
4 piece(s), torn up
Bran flakes cereal
¼ cup(s), or All-Bran cereal
4 medium, hulled and sliced
½ large, peeled and cut into chunks
- In a bowl, stir together ricotta cheese and sugar; stir in mint.
- Using a large glass — preferably a wine glass — spoon in 3 tablespoons cereal. Top with half ricotta cheese mixture; top with strawberries, remaining ricotta cheese and bananas. Sprinkle with remaining cereal and serve.
