This frozen bark is an ingenious way to enjoy a frozen dessert and cookie rolled into one. The recipe takes mere minutes to prepare, and the cookies can be stored in the freezer for easy weeknight desserts and refreshing after school snacks. The bark is a great sweet treat on its own, but it can also be served as the base for or topping to additional fresh berries and yogurt. Or present the frosty bark at the center of your dessert plate, drizzled with a fresh, homemade fruit sauce and a smattering of fresh berries to garnish.

Ingredients

Plain lowfat Greek yogurt

2 cup(s)

Agave nectar

2 tbsp(s)

Lemon zest

1 tsp(s)

Fresh lemon juice

1 tsp(s)

Blueberries

2 cup(s)

Graham crackers

6 square(s), crushed (divided)

Instructions

  1. Line a 9 X 13-in pan with aluminum foil so foil hangs over edges of pan.
  2. In a small bowl, combine yogurt, agave, lemon zest and juice; fold in blueberries and 6 Tbsp crushed graham crackers. Using the back of a spoon, spread into an even layer in prepared pan; sprinkle with remaining graham cracker crumbs.
  3. Cover pan with foil; freeze for at least 1 hour.
  4. When ready to serve, remove from freezer, uncover pan and lift bark from pan holding edges of foil. Cut into 16 even pieces (if the bark is too hard to cut, let sit for a few minutes until it softens slightly). Keep bark stored in freezer in a sealed container until ready to serve.
